For your assignment, you need to find a scale or measurement to measure customer satisfaction, restaurant image, and/or customer loyalty. Many scales are from commercial sources and are not reproduced in the article. I did find a few. I got the best results in PsycInfo and ProQuest Central when I used the advanced search option.
Use the same search terms as above - then in type (survey OR scale OR questionnaire ).

Multidisciplinary search across many databases including business, health and medicine, social sciences, education, science and technology, and arts and humanities.
Finding Survey Instrument
In PsycInfo, type in key words such as "customer satisfaction" restaurant in the search box. Check Appendixes in Supplemental data - located in one of the boxes below the search box. This doesn't work every time, but I did get better results with this method.
